Fast and Easy Brunches for Busy Moms

So everyone's lives are so hectic right now, right?

Kid 1 is e-learning.

Kid 2 has joined the circus. 

Kid 3 goes to school every other week on Tuesday's and Thursday's only, except for the 3rd week of the month when everything is digital. 

You're working from home, managing your home, cleaning your home, teaching your kids... all while you’re expected to look like a human being. 

Girl. Let's just stop right here. 

I know how easy it is to let diet, exercise, beauty, and everything else fall to the wayside. I get it. I’ve done that.

But I am all about giving you fast and easy tips that work for me for all of these scenarios. (Well not for exercise - I'm still trying to find my groove for that. I have my eye on a peloton! What are you doing for a workout?) 

Let’s talk breakfast/brunch (I try not to eat until 11am-12pm.) 

FAST AND EASY FOOD 

In the morning I have coffee with a tablespoon of vanilla nutpod, a few drops of a stevia, and a sprinkle of my favorite -- Flavor God Buttery Cinnamon topper. 

Until then I'm typically drinking lemon water. 

Here are some of my fave go-to easy and healthy brunch/lunch options.

TUNA WRAPS 

Ingredients 

Wild Planet Albacore Tuna - 1 Can

Onion - 1/4 diced

Celery - 1/2 stalk diced 

Mayo - 1-2 Tablespoons 

Salt and Pepper (I love the blend from Flavor God

(And anything else you want for your tuna.) 

Siete Cassava Tortillas 

Cheese (if you can eat dairy) - a sprinkle

Spinach - half a cup 

Tomato - 1/4 cup diced 

Lemon - cut into quarters and then squeeze 1/4 over top 

Instructions 

Drain your tuna 

Sprinkle lemon juice on top

Dice your celery and onion 

Mix tuna, celery, onion, and mayonnaise 

Sprinkle liberally with salt and pepper. Keep tasting as you go. You do not want it to be too salty. I personally love the Flavor God salt and pepper mix. 

Set tuna to the side. 

Take your cassava flour tortillas and toast them in a convection oven for a minute.

Place the tuna on it nicely down the center

Sprinkle cheese of your choice. I personally love sharp cheddar. 

Put it back in the toaster for 2-3 minutes. 

Once the cheese has melted, take it out and sprinkle your tomatoes and spinach on top. 

Other great topping options include avocado, cilantro, microgreens, herbs, etc. What do you like to top your tuna sandwiches with? 

Voila! You are done!

This recipe yields 4 wraps. Double the recipe as called. 


VEGGIE EGG SCRAMBLE 

Ingredients

1 jalapeno 

10 cherry tomatoes or a small plum tomato 

1/2 onion 

handful of spinach 

1 red pepper 

1 orange pepper 

Shredded cheese of your choice. I am a sharp cheddar fan. 

4 eggs 

Avocado oil spray 

Salt and pepper 

Instructions

Dice your veggies 

Mix all the veggies together with the exception of spinach 

Crack and beat your eggs in a separate bowl 

Spray your pan with avocado oil (sub with butter, coconut oil, or the oil of your choice) 

Turn heat to medium 

Let it heat for a minute or two 

Throw in your diced veggies with the exception of spinach 

Sauté for 5-6 minutes 

Add eggs 

When your eggs are starting to solidify add in the chopped spinach

Once eggs are cooked, throw cheese on top and cover. 

YOU ARE DONE! 

Yields 4 servings 

You can eat this:

  • By itself! 

  • With fruit on the side.

  • With sausage or bacon on the side. 

  • With GF toast 

  • With Cassava flour tortillas and some hot sauce on top 

PEACH AND BURRATA SALAD (Inspired by Liz Adams)

Ingredients

Arugula - 1 piece

1 ball of burrata

Slivered almonds

Dijon mustard

Honey

ACV

Olive oil

Salt and pepper

Instructions

Place arugula in a bowl

Slice Peach

Shred/cut/separate burrata ball

Sprinkle slivered almonds on top

Dressing Instructions

Mix 2 Tbsp of olive oil, 1 Tbsp of dijon mustard, 1 Tbsp of honey, 1 Tbsp of ACV, Salt and pepper

This is the easiest and fastest salad. Plus, it’s absolutely delicious. It’s super light and airy and won’t leave you feeling overstuffed or too full. It’s just right! Fun addition -- add in shredded rotisserie chicken!
